This. Is. Fufu!!!!!!!! fufu is probably the most popular dish in Ghana. it is an all time favorite and brings families together. the great thing about fufu that truly does bring a family together is that it takes two people to make, one person pounds and another person turns the fufu.
Fufu is usually comprised of cassava and yams or plantians, the main ingredient being cassava. I am told that in the north it is made solely of yams and people who live up there say its better but I sincerely doubt that because southern fufu is the beeessssst.
The creation of fufu begins by boiling the yams or plantains and cassava. once it is boiled nicely, the pounding may commence. As seen in this video, the pounding is done with a giant mortar and pestle. They are carved by hand from wood. First the cassava is pounded, then the yams (or plantains). After each starchy vegetable is thoroughly pounded, they will be pounded together. In the video, I believe I am pounding the cassava.
After the fufu is finished, The turner of the fufu will make it into a pretty ball and place it in a bowl. A delicious Ghanaian soup will be served on top of it with meat.
Talking about this makes my mouth water, when I go back to the states I WILL find a way to pound.
